Air Fryer Zucchini Dippers with Protein Ranch Dip
Ingredients
- 2 large zucchinis, thinly sliced 1/4 inch thick
- 1 tbsp olive oil
- 1/4 tsp salt, divided
- 1/2 tsp black pepper, divided
- Cooking spray
- 2 tbsp low-fat buttermilk
- 2 tbsp plain nonfat Greek yogurt
- 1 tbsp avocado oil mayonnaise
- 1 tbsp chives (or green onions), finely chopped
- 1/2 tsp apple cider vinegar
- 1/4 tsp garlic powder
Directions
In a large bowl, toss the zucchini rounds with olive oil. Season with 1/8 tsp salt and 1/4 tsp black pepper.
Lightly coat the air fryer basket or tray with cooking spray. Arrange the zucchini slices in a single layer and cook at 375°F (190°C) for 10–15 minutes, or until edges are crisp and golden and centers are dry, working in batches as needed.
Meanwhile, in a medium bowl, whisk together the buttermilk, yogurt, mayonnaise, chives, vinegar, garlic powder, remaining 1/8 tsp salt, and remaining 1/4 tsp black pepper until smooth.
Serve the zucchini dippers with the ranch dip.
